Baked Pork Chops & Stuffing

Ingredients
  

  • 1 Apple, chopped
  • 1 Yellow onion, chopped
  • 1 tbsp Extra virgin olive oil
  • 4 Thick-cut boneless pork chops
  • 2 tsp Fresh chopped rosemary
  • 2 tsp Fresh chopped thyme + more for garnish
  • Salt & pepper to taste
  • 6 oz box Stove Top stuffing mix + butter & water per instructions
  • 1 cup Sweet white corn (frozen is fine)

Method
 

  1. Preheat oven to 400
  2. Grease large baking dish or spray with cooking spray
  3. Chop one peeled apple + one onion and place in bottom of dish
  4. Prepare stuffing according to package directions adding frozen corn along with dry stuffing mix
  5. Season both sides of pork chops with salt, rosemary and thyme
  6. In large saute pan, heat olive oil over medium heat
  7. Brown pork chops for a few minutes on each side
  8. Place browned pork on top of apple and onion slices in baking dish
  9. Place stuffing around pork chops
  10. Cover dish with foil and bake for 25 minutes
  11. Remove foil and continue baking for 10-15 minutes, until internal temperature of pork reaches 145 degrees
  12. Garnish with fresh thyme and serve
