Banana Streusel Muffins

Have ripe bananas sitting on your counter?! Make banana muffins. Better yet, banana streusel muffins. Streusel is optional. Either way, the very best banana muffin recipe!

Ingredients
  

  • 3/4 cup All-purpose flour
  • 1/2 tsp Baking powder
  • 1/2 tsp Baking soda
  • 1/4 tsp Salt
  • 1/2 tsp Ground cinnamon
  • 1/8 tsp Nutmeg
  • 2 Ripe bananas, mashed
  • 3 Tbsp Unsalted butter, melted
  • 1/2 cup Brown sugar
  • 1 large Egg
  • 1/2 tsp Vanilla Extract
  • 1 Tbsp Milk
  • Optional: raisins or nuts
Streusel Topping
  • 1/4 cup All-purpose flour
  • 1/4 cup Brown sugar
  • pinch Salt
  • 2 Tbsp Unsalted butter, very cold and cut into small pieces

Method
 

  1. Preheat oven to 425. Prepare muffin tin (grease, use non-stick spray or muffin cup liners)
  2. Combine flour, baking powder & soda, salt, cinnamon, and nutmeg together in a bowl.
  3. In a mixer (or large bowl), combine mashed bananas, melted butter, brown sugar, egg, vanilla and milk.
  4. Add dry ingredients to wet ingredients and mix until combined.
  5. Add raisins or nuts, if desired, and fold into batter.
  6. Using an ice cream scoop, add batter to cupcake liners.
  7. Add streusel topping to each muffin (topping instructions below).
  8. Bake 5 minutes at 425, then lower heat to 350 for another 15 minutes.
  9. Cool in the pan for 5-10 mites then transfer to wire rack.
Streusel Topping
  1. Combine flour, brown sugar and salt in medium sized bowl.
  2. Add butter and cut in to form course crumb-like mixture. You can use a pastry cutter, two knives, or a fork.
  3. Sprinkle over tops of each muffin before baking.
