Servings: 8 Good Sized Biscuits

Ingredients

  • 2-1/2 cups All Purpose Flour
  • 2 tbsp Baking Powder
  • 1 tsp Salt
  • 1/2 cup Unsalted Butter, but into small cubes Cut up and return to refrigerator to chill. I do this earlier in the day or night before.
  • 1 cup Buttermilk
  • 1 tbsp Honey (optional)

Method

  1. Preheat oven to 425
  2. Mix flour, baking powder and salt together. I use my KitchenAid mixer.
  3. Add cubed butter and mix until mixture is all course crumbs.
  4. Add buttermilk and honey and mix until dough forms.
  5. Turn dough out onto floured surface and and knead a few times until flour absorbs and stickiness dissapates.
  6. Roll out with rolling pin to 1/2 thick, then fold in half, roll out again, fold in half again, and roll out again.
  7. Using a round biscuit cutter, cut out biscuits and place on prepared baking sheet. I use a Silpad or parchment sheet.
  8. If you like, brush the tops with buttermilk.
  9. Bake for about 18 minutes. Start watching after 15 minutes to ensure they don't get overly browned.
  10. Serve warm with butter and honey, or jam.
