GREEN SALAD WITH CHICKEN AND APPLES

Ingredients
  

VINAIGRETTE
  • 1/4 cup Balsamic Vinegar
  • 1/4 cup Orange Juice
  • 1/4 cup Extra Virgin Olive Oil
  • 2 tbsp Lemon Juice
  • 2 tbsp Soy Sauce
  • 1 tbsp Dijon Mustard
  • 1/2 tsp Salt
  • 1/4 tsp Fresh Ground Black Pepper
  • 1/4 tsp Ground Ginger
SALAD
  • Big Bowl of Salad Greens Spring Mix & Little Gems
  • 2 cups Shredded Rotisserie Chicken
  • 1 Apple, chopped into pieces
  • 1 cup Red, Seedless Grapes cut in half
  • 1/2 cup Chopped, Toasted Walnuts Toast in 350 oven for 7 minutes

Method
 

  1. Add vinaigrette ingredients to a cruet, shake until well blended
  2. In a large bowl, add salad ingredients. Add a little salt and pepper, if desired, and toss Add vinaigrette and toss again. Serve with sliced baguette.

Notes

There will be left over vinaigrette, so refrigerate and make more salads!
