Quiche Lorraine

Ingredients
  

  • 1 Pie Crust
  • 1 Tbsp Butter
  • 3/4 cup Yellow onion, diced
  • 1 cup Ham, diced
  • 3/4 cup Cheddar Cheese, grated
  • 3/4 cup Monterey Jack Cheese, grated
  • 3/4 cup Greyere Cheese, grated
  • 1/4 cup Chives, chopped into small pieces
  • 6 Eggs
  • 1 cup Half-and-Half
  • 1/2 tsp White Pepper
  • Pinch Nutmeg

Method
 

  1. Preheat oven to 425.
  2. Grease a 10" pie or tart pan, add pie crust and bake for 10 minutes.
  3. Remove crust from oven and reduce temperature to 350.
  4. In a medium saucepan melt butter over medium to low heat and add chopped onion. Sauté until light brown and slightly caramelized.
  5. In a mixing bowl, add cheeses, ham, half of the chopped chives, sautéed onion and thoroughly combine. Spread out evenly in bottom of pie crust.
  6. In a small bowl, whisk together eggs, half-and-half, white pepper and nutmeg. Pour into pie crust over top of ham and cheese mixture
  7. Place on a parchment lined baking sheet and bake for 1 hour or until center is set.
  8. Sprinkle with remaining chives before serving.
