- Heat oil in Dutch oven or large soup pot over medium heat
- Add onion, carrots and celery and cook until onions are translucent
- Add garlic, red pepper, zucchini and broccoli and continue to cook on medium heat for another 5-10 minutes
- Season salt and pepper
- Add tomatoes, chicken broth, Italian seasoning and Parmesan rind
- Bring to a boil, reduce heat, cover and simmer for 30 minutes
- Add corn and season to taste
